I am trying to book this with stopover but believe it may have expired. Or perhaps I am too far into November? 10th NOV is my date of travel.
Plan was AMS > JNB. 2 day stopover JNB >AMS. 1 week in Abu Dhabi then AUH>AMS but OTA’s quote £1246 then it jumps to £4000

The fare is still available. I did a quick check, couldn’t find anything from AMS the 10th November but from Brussels. LINK
However, I couldn’t find anything with a 1-week stopover in Abu Dhabi.
